Blueberry Elderflower Smoothie

We returned home yesterday from a spectacular excursion! Derek and I bicycled from Ipswich, MA to Acadia National Park, ME. In sum, our trip was inspiring, challenging, beautiful, exhausting, hot and humid, frustrating, simple, and perfect. Our long rides each day gave me plenty of time to let my mind wander. So, I now have loads of ideas for future blog posts. Hopefully you'll find them interesting!

At home, our fridge was completely empty, but our prolific garden was patiently waiting for us, offering a bounty of fresh produce for dinner.

Here is a snap shot of our 350 mile trek, and the pile of produce we harvested for dinner. Potatoes, tomatoes and peppers (OH MY!)!


 

This morning I awoke wanting a blueberry smoothie. Perhaps my body is craving antioxidants. No matter, here's what I made:


Blueberry Elderflower (Syrup) Smoothie

Ingredients:
2 C. blueberries
1 C. yogurt
2 C. almond milk
1/4 C. Elderflower Syrup


Directions:

- Blend all ingredients until smooth.

Yum!
