Matcha Green Tea Ice Cream: Recipe

In my first week of being 40, I've celebrated by eating a lot of ice cream. Vanilla tends to be my favorite, but Matcha Green Tea is a very close second. It's silly, but by adding Matcha as an ingredient, I somehow feel better about consuming a big bowl of ice cream every night.

I found a simple recipe for Matcha Ice Cream on The Catty Life, and now I'm addicted. She also provides a recipe for Matcha Ice Cream without an ice cream maker.

Ingredients (using an ice cream maker):
1.5 C. whole milk
1.5 C. thickened cream
1/2 C. sugar
2-3 Tsp Matcha powder
1 Tbsp hot water
1 Tsp Vanilla, optional

Directions (makes 1.5L):
  • Pre-freeze your ice cream maker bowl for 24 hours.
  • In a bowl, combine milk and sugar and beat with an electric mixer until properly combined and sugar is dissolved.
  • Mix Matcha powder with 1 Tbsp hot water and stir into a paste. Add to the milk mixture and mix until combined.
  • Stir in the cream.
  • Cover and refrigerate for at least 2 hours, or overnight.
  • When you’re ready to churn the ice cream, place the frozen bowl on the ice cream machine, turn on.
  • Slowly pour in the cream mixture and let churn for 15-20 minutes. Slowly add more Matcha and Vanilla, as desired.
  • Remove to a freezer container and freeze.

    1. Thank you for your comment. This one can be made with or without eggs...I took the easier route. Good luck with yours!

  2. That sounds interesting. I wonder how that would taste in a smoothie. I try to avoid dairy products and smoothies make up for not being able to eat ice cream.

    1. Hi Sandy. Check out this blog entry: http://www.liveinart.org/2012/08/creamy-matcha-almond-smoothie-recipe.html. You could simply omit the yogurt and add more almond milk...
